Prep: chop garlic and green peppers
Get protective eye-wear then chop the onions
Slice chicken and fry it together with first the peppers, then add the garlic, then the onions and season with spices of your choice (red pepper flakes if you like it spicy)
Add a basic tomato sauce and cream sauce (Schlagsahne) to the basically cooked chicken, peppers, onions and garlic, add chopped tomatoes and a handful of shredded cheese, stir until cheese is melted and let it simmer- in the mean time – also cook the tortillas (slightly) in oil so they don’t crack or break a part. When finished, fill the tortillas with enchilada mix, wrap and place them in the baking pan
Cover the enchiladas with some chili sauce and if possible the left over enchilada sauce (minus any solids) and more shredded cheese!
(Preheat oven before-hand) Bake for 20 minutes! Let them cool for 10 minutes before you serve them!
Tastes great with sides like sour cream, lettuce, and guacamole! Guac: blended avocado, the rest is optional, but recommended: minced onions, garlic, diced tomatoes, some lemon or lime juice, little sour cream, cream cheese, or mayo, salt and pepper to taste
It’s important that the avocado is ripe enough to easily mix and mash up!
